"Thrifty Thursdays"...Food Budget Tips


As I've stated before, my husband and I follow a budget. However, we've always had a difficult time sticking to our food budget. Now, you could say, why don't you just increase that category? Which, in all honesty, we have done (mainly because Eliana eats more now). However, a budget is like a puzzle to me, and I really wanted to find a way to stay within our budgeted amount.

We love to eat out. Don't get me wrong, I love to cook, but there is something we both love about eating out. I think there are two big reasons we like eating out so much: 1) Nothing to clean-up. 2) Fountain Drinks!!!! One of our biggest weaknesses is fountain drinks. We love them. We get them when we eat out, and sometimes we get them for a special treat at night when we're on our way home from somewhere (on those occasions we take it out of our "Fun" budget).

Here are a few tips that we've implemented to try to stick to our food budget. You may think we're crazy after reading some of these, but that's okay with me.




1) Menu Plan - I've preached about menu planning before. There are various ways to do it, but find a method that works for you, and stick with it. We menu plan monthly. Why? Our biggest reason for this is because it allows me to go to the grocery store less. What happens when you go to Walmart? Inevitably, you end up with something in your grocery cart that wasn't on your list. The more times you go in a month, the more likely that will happen. I still have to go several times throughout the month for produce, bread, milk, or more yogurt for Eliana, but it drastically reduces the number of times we go. Also, if I menu plan for the whole month, I have plenty of options for what to cook for supper. This also reduces the chances of one of us saying, "I don't know what I want, so let's just go somewhere."

2) Cook at home more often - I know grocery prices are rising, but I can almost guarantee that you can cook better and healthier meals at home for the price you would pay in a restaurant. Not to mention most of the time we have leftovers. This allows you to have 2 meals for the price of 1! Just make sure you eat your leftovers! We menu plan 5 dinners at home each week. It doesn't always happen that way, but we're prepared for it. If for some reason we don't make a meal that we've planned for, we add it to the next month's plan. Always make sure to use your perishable items, though! If you don't know how to cook, talk to me. I'll give you some pointers and some easy recipes!



3) Pack your lunch - This one is where you may start thinking we're crazy. Remember our slight obsession with fountain drinks? Keep that in mind when you read this. My husband and I try to eat lunch together each day. Sometimes it doesn't work out, but for the most part we are able to do it. One day we realized how much money we were spending on these lunches, and we decided we needed to change something. We knew we still wanted to eat together, but it takes too long for him to drive home for lunch. I work from home, but for him, 40 minutes of driving for a 60 minute lunch break seemed like too much. I also didn't want to spend 40 minutes driving each day to meet him at his work. We decided we could meet in the middle, and I would pack our lunch. The problem with this is that most places aren't too happy when you walk in with your packed lunch and don't plan on buying anything. Our solution? Buy fountain drinks! We often meet at our local mall food court, and only buy drinks. I'll admit we do this at McDonald's as well. This has saved us a ton in our food budget. If you really need to cut costs, you shouldn't buy drinks either. Drink water, it's healthier and cheaper. We have used that option as well.

4) Coupon - but only if it's something you really use. I know coupons are tempting, but they aren't helpful unless it is something you normally spend money on. Also, make sure that the coupon will really save you money. If you normally buy the store brand (we do), check to see if the coupon will make the name brand cheaper than the store brand...many times it doesn't. Our local paper does not have many coupons, so most of the time I use http://www.coupons.com.

5) Shop your pantry -  What do I mean by this? Before you make your menu plan and your grocery list, look in your pantry, refrigerator, and freezer. Plan meals that include items that you already have on hand. Please, please, please check as you're making your grocery list, so you don't end up with 14 cans of tomato sauce or 4 pounds of stick butter.

2014 Goals! (I'm not calling them Resolutions)

I know I'm a day late on this, but that's what strep will do to you. Yuck.

I've never been very good at sticking to my New Year's Resolutions, but I do have some serious goals that I want to work on whether it is a new year or not. I thought that if I put them on my blog I may feel a little more pressure to complete them. So here you go...if you can handle reading all of this.


1. Read through the Bible. Man. This is literally on my list every year. I will eventually accomplish it. Hopefully, if it is on here I'll feel like I will be held accountable for it.

2. Talk to more people about Jesus! This one is harder than it should be for me. I have been given the best gift I could ever get (eternal life with my Savior)…why don’t I tell more people about this?

3. Be a better wife. I know what you’ll say when you read this. Oh, I’m sure you’re a great wife. You know what, though? I think I can always be better. My husband is wonderful, and I need to act like it more.

4. Be a better mom. Same as above. I mean really, look at this face.

5. Get and stay organized. I love organization! I love anything that helps me be organized. However, I have a toddler and a husband that aren’t such big fans of it (or at least they aren’t big fans of helping me stay organized). We also live a super busy life, so I need things that help me stay organized quickly! Leave me a comment if you have any tips!


6. Keep the house clean on a regular basis (not just when I know people are coming over). This also goes along with #5.

7. Make some crafts. I have a  “Crafts” board on Pinterest. You can follow me by clicking here. I would love to be able to make some of those crafts.

8. Continue to stick to our Monthly Meal Plan. We have been doing much better about this, but I want to keep it up and improve even more!

9. Blog more frequently.

10. Get a yearly check-up. I have to put this on here so I can be held accountable.

11. Go to the dermatologist. My Papaw found out he had melanoma this past year. His doctor told him that his whole family should get checked because it is genetic. Again, I put that on here so I could be held accountable.

12. Go outside with Eliana more when it is warm. I tend to get busy doing work and don’t go outside enough. I’m hoping this year she can even play in the backyard some while I take my laptop out there and watch her play. However, I do want to make sure that I am playing with her, too.

13. Find more fun things to do with Eliana during the day.

14. Get Eliana out of the breakfast (yogurt) and preschool lunch (pb&j) rut that she is in.

15. Go to Disney World!!! We are doing this later this year, and I am super excited! I have already started researching and looking up tips (it’s what I do…don’t make fun)!

16. Continue to find ways to be frugal!

17. Go to bed earlier. Midnight isn’t cutting it for this 30-year-old.

18. Continue working on turning our basement into a den/playroom.

19. Relax. Try not to feel like you or anyone or anything else has to be perfect. God has everything under control.
        


Did I really just come up with 19 goals for 2014? That is crazy! Hopefully I can follow-through on most of them! Hold me to it!

A cold day = A perfect day for Chicken & Rice Soup

I never meant for this blog to become only about Eliana, but when life got so busy I only forced myself to write about her (and not very frequently). However, I am trying to change that now. Another thing that I love is cooking. I love to cook difficult and new recipes, but honestly, I don't have much time for those anymore. Now it's all about cooking things that are fast and easy to cook with a toddler pulling on my leg. I also have to think about recipes that I can get as many veggies in her as possible. This soup fits that description. It is so easy to make, but it tastes great! I got the recipe from: http://bloggingmomof4.com/crockpot-freezer-meals-chicken/. I usually make this as a freezer meal, but it really is super easy, and today I just threw it all together. I cheat and use canned chicken. I know some people think that's gross, but like I said, it's all about fast & easy to cook with a toddler on my leg.


Homestyle Chicken and Rice Soup

Ingredients
1 lb Cooked Chicken Breast chopped into pieces
1 bag frozen vegetables - I just use a bag of frozen mixed veggies. You can use whatever you prefer.
4 T butter
1 box chicken stock (added the day of cooking)
1 C rice (added last 20 minutes of cooking)
I would also recommend adding some salt and pepper even though it wasn't in the original recipe.
Directions
Add chicken, vegetables and butter to freezer bag and freeze.
Write on Freezer Bag
Thaw slightly and place in crockpot.
Add the box of chicken stock and cook on low for 4-6 hours.
Add 1 C rice last 20 minutes of cooking.

Stuffed Peppers

Tonight I made one of my all-time favorite dishes...stuffed peppers. I remember eating this when I was a kid. I didn't like the pepper part as much then, but I definitely loved the filling. Now, I eat it all. It's a pretty quick recipe, but it is more difficult now that I have a 5-month-old wanting my attention all of the time.


Anyway, here is the recipe. This is the one that my mom has always made for me. I usually don't bother with the second can of tomato sauce because I am the only one that would use it. I have considered adding some extra sauce to the mixture, though...maybe next time. Also, it calls for 4 green peppers, but I never feel like there is enough of the mixture to completely fill the peppers. If that bothers you, just add a little more of each ingredient. Enjoy!
